Meatless Monday: Tomato, Eggplant, Zucchini and Potato Bake by Beth Dooley
One of the publications I write for often has a feature written by a local chef named Beth Dooley. Without fail she always includes some mouthwatering recipes. Last year I got to interview and write a profile about her for the launch of her new book The Northern Heartland Kitchen, which I have to tell you has some amazing recipes including this one that I’ve been offered permission to share with you.
I made this for last week’s Meatless Monday meal using some of the ingredients from the CSA box. I enjoyed leftovers for lunch the next day and even put some on top of field greens. Don’t miss making this one because it’s easy to prepare, uses in season ingredients, and has you wanting more.
